This is a great recipe which was adapted from that of Cheryl and Bill Jamison. Here are a few hints when making one of Texas's greatest deserts:
Choose peaches that are ripe but no too ripe. They should be firm but still give a little when squeezed.
Always remember that when making anything requiring fresh fruit such as Cobbler, Banana Bread etc. Always allow the fruit to ripen completely. The more ripe the fruit is, the more flavor they produce.
If you have never pealed a peach before.... here's the way you do it.
Filling
12-14 RIPE Medium Peaches (about 3 1/2Lbs) - Peeled, Pitted and Sliced
1/4 Cup Sugar
1 Tbs Lemon Juice
2 1/2 tsp Ground Cinnamon
3/4 tsp Ground Ginger
1/2 tsp Allspice
1/4 tsp Pure Vanilla Extract
Batter
1/4 Cup Unsalted Butter
1 1/4 Cup All Purpose Flour
3/4 Cup Sugar
2 tsp Baking Powder
1 Cup Milk
Preheat oven to 350 degrees F.
In a bowl, mix together all the ingredients for the filling mix,all peach slices. Set this aside to allow the natural juices to be drawn out.Butter in a 9" x 13" baking dish and set it in the oven to melt while it is preheatingastir together stir together the Flour, Sugar and Baking Powder. Add milk and mix until lightly blended.remove the baking dish with melted butter from the oven and pour the batter mix evenly over the butter - DO NOT MIX OR STIR THE BATTER MIX INTO THE BUTTER, THIS WILL ELIMINATE THECRUNCHY EDGES.the peach filling evenly over the batter to within 1" in the side walls of the dish.for 45 min. or until the batter becomes golden brown.warm alone or with vanilla ice cream.
Blackberry Cobbler
You can also substitute the peaches for blackberries, simply eliminate the ginger and add 1/4 tsp of nutmeg.
