Pigs in a Blanket

Another excellent side for any sports watching event. Can be served side by side with the Texas Shooters and kept warm for the duration of the event. The cooked "pigs" can be kept warm by placing them in a crockpot set on warm or low.

These pigs have been around for quite some time and many people just don’t realize how easy they are to make at home. Although this recipe should be called Cows In a Blanket you can use either miniature beef or pork sausage. Only two basic ingredients are needed:

· Can of refrigerated biscuit dough (country style, buttermilk etc.)

· Package of beef or pork cocktail wieners (such as the Hillshire farms Lil’ Smokies)


Preheat the oven or grill as directed on the biscuit package.

Open the package dough and cut each biscuit in half. Using your fingers stretch out each piece into roughly a triangle shape. Place a wiener on the wide end of the dough and roll up to the narrow end. If there is dough extending past each end simply tuck under the bottom and place on ungreased cookie sheet. Once all are done, place in oven/grill for approximately 12-15 minutes or until golden brown.



Options: If you like something a little spicier, thinly slice or dice some pickled jalapenos and put a few pieces on the inside of the dough prior to rolling the wiener up. If you are making a mixture of spicy and mild, push the jalapeno into the outside of the dough after it has been rolled up for easy identification.
