A "mop" sauce plays a very important role in smoking and barbecuing certain meats . Not only does it provide an extra layer of flavoring but it also, and more importantly, helps keep the meat moist during the traditional long, slow cooking process. There are a wide variety of mops which are limited only by ones imagination. However here, as the title says, is a basic mop. The addition of the meat drippings is an option and often depends on if you slow cook the meat first in the oven and have drippings available. The sauce can be applied with a brush, a BBQ mop, or even a plastic spray bottle.
12oz Beer (preferably a dark, but any will do)
1/2 C Cider Vinegar
1/4 C Vegetable Oil (you can also use canolla, or Olive Oil)
1/2 C Onion (medium, Chopped or thin slices)
2 Garlic Cloves (or 2tbs or the pre-minced garlic)
1 Tbs Worcestershire Sauce
1 Tbs Adkins Dry Rub (or any other dry rub or seasoning to go with the dish)
1 C Drippings from the pre-cooked meat (this is optional and only if you have already started the cooking process)
Combine all ingredients in sauce pan and simmer . Use the mop warm.
